1. Cao Lau
One of the famous specialties of Hoi An. Cao lau is made with noodles, pork, and local greens, that is found only in Hoian. Its unique taste and texture is achieved by using water from an ancient Cham well named Ba Le Well. In the last few decades, new restaurants with modern versions have added shrimp or chicken, and additional herbs.
2. Hoanh Thanh

Perhaps the species are the reason why dumplings can only be delicious in Hoi An.
7. Black Sesame Sweet Soup (Xí Mà)
Xi ma is a kind of dessert which is made from black sesame, sugar, pennywort, and a kind of Chinese medicine. With its strange color – black, this is a kind of weird food that you won’t try when you are just tourists walking around. However, this is a good kind of dessert that you mostly just can find it popular in Hoi An.
8. Water fern cake (Bánh Bèo)
Coming to Hoi An, you should try this cake since it’s not very popular elsewhere except some central Vietnam cities: Hue, Da Nang, Hoi An. Hoi An water fern cake is different from Hue water fern cake. The water fern cake here is often served in a small bowl with a wet topping made with minced shrimp, pork, spring onion and dry topping made from deep-fried Cao lau noodles.
9.Clams served with smashing rice paper ( Bánh đập hến xào )
Clams served with smashing rice paper is made from two pieces of crispy rice paper and wet rice paper, combined together and smashed on the table before enjoying it with special sauce with chili, which is made from fishes caught in Cua Dai beach.
Bánh đập hến xào is a combination of minced clams and smashing rice paper. Clams are fished from Hoai river, which runs through Cam Nam village. They are boiled and then fried with various vegetables and spices, including onions, peppers, chili, gingers and peanuts.
